  • Pour 150 – 180 ml of fresh milk into a small saucepan.
  • Heat the milk over medium – low heat, stirring constantly with a whisk or a spoon. Be careful not to let the milk boil, as this can scorch the milk and make it taste unpleasant. The ideal temperature for milk in a flat white is around 60 – 65°C (140 – 149°F).
  • Once the milk is heated, you can start frothing it. If you’re using a manual milk frother, simply pump the frother up and down to create foam. If you’re using an electric milk frother, follow the manufacturer’s instructions. The goal is to create a thin layer of microfoam on top of the milk. Microfoam is a smooth, velvety foam that gives the flat white its characteristic texture.
